Protein Muffins

Protein muffins are simple to make and packed with protein for a powerful start to your mornings. You can store these in the fridge and use them as a quick morning meal throughout the week as well.
Ingredients You'll Need
Eggs
Spinach
Onions
Bacon
Shredded Cheese
Seasoning of your choice (taco seasoning, Slap Ya Moma, or whatever seasoning your taste buds enjoy in eggs)
Anna's Addicting Salsa - Dat O'Sh!t Hot Stuff
Directions
Preheat the oven to 350 degrees
Cook Bacon any way you like: in the oven or on the stove top.
Saute Spinach and Onions and set aside. Spinach and/or onions may not be your thing and that is ok. You may like mushrooms, bell peppers, artichokes...look in your fridge and get creative with this recipe. And share it with me :-)
Whip a dozen eggs in a bowl and season to your liking - I prefer Fiesta Fajita Seasoning because it has everything in it. Using egg white is a great alternative as well. You get to choose.
Add cooked ingredients and shredded cheese to the whipped eggs and mix well.
Pour into a greased muffin pan - I prefer the silicone muffin pan greased with olive oil. If you do not have a muffin pan, use a casserole dish or some type of oven safe pan.
Place in the oven for approx. 20 minutes.
Remove from the oven and let sit for about 5 minutes.

Top your protein muffin with Anna's Addicting Salsa. In this image, I used Dat OSH because I was feeling fiery that morning. Any 3 flavors will work and gives your egg muffin a flavor boost.
