Serves 2 regular sized loaf pans or 3 smaller ones | Prep Time 10 minutes | Cook Time 60 minutes

Why I Love This Recipe

Ingredients You'll Need

3 1/2 cups flour
2 tsp salt
1/2 tsp baking soda
1 tsp cinnamon
1 tsp nutmeg
3 cups white sugar
1 cup vegetable oil
2/3 cup water
1 tsp vanilla
1 (15oz) can pumpkin puree (do not use the premixed pumpkin pie filling!)
Optional: Nuts - pecans, walnuts


Preheat oven to 350.
Grease 2 loaf pans. Tip: Cut wax paper out to line the bottom of each loaf pan and spray that as well. This will help when turning the loaves out after they bake.
Mix all of the ingredients together and divide evenly between the loaf pans.
Bake for 6o minutes. Check for doneness by inserting a knife in the center and make sure it comes out clean.
