Why I Love This Recipe

These muffins are a family favorite we usually have them at thanksgiving but they're a good snack anytime. Unlike most muffins, these actually taste better the next day.


Ingredients You'll Need

1/2 cup sliced, unblanched almonds
1 2/3 cup flour
1 cup sugar
1 Tablespoon pumpkin pie spice
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
2 large eggs
1 cup plain pumpkin
1/2 cup butter, melted
1 cup chocolate chips


Directions

Heat oven to 350. Put almonds on cookie sheet & bake about 5 mins, cool.


Grease muffin cups.


Mix flour, sugar, pie spice, baking soda, baking powder & salt in large bowl.


Break eggs into another bowl.


Add pumpkin and butter & whisk until well blended. Stir in chocolate chips & almonds.


Pour over dry ingredients and fold in with rubber spatula just until dry ingredients are moistened. Scoop batter evenly into muffin cups.


Bake 20-25 mins.


Makes 1 doz
