Why I Love This Recipe

The first time I had this was over a Christmas Lunch. It was accompanied with good conversation and tons of laughter.

Like all my memory recipes this one has had some changes through the years, but light chances that enhance the taste and flavour of the pumpkin

Ingredients You'll Need

2 cups Cooked and cooled pumpkin
1 egg
8 Tbsp All Purpose Flour
4 Tsp Baking Powder
1/4 Tsp Cinnamon
1/4 Tsp Ground Cocoa Nibs
1/8 Tsp Espresso Powder
a pinch of salt
2 Cups Granulated / White Sugar
1 Cup Water
1/2 a stick of Butter (+/-50 g)
pinch of salt
10 ml Corn Starch & some water to make a slurry


Bring all the ingredients except for the Corn Starch to the boil.

Mix Corn Starch with some water to make a slurry and then add the slurry to the syrup a little bit at a time until you get to the consistency you prefer

Mix all the ingredients in a bowl until well combined.

Using a deep frying pan, heat some oil for frying the fritters.

Using a large spoon, drop the batter in the heated oil, turning when the fritter is brown on the one side.

Keep fritters warm in a warm drawer or the oven until all the fritters are done

Serve the fritters with the syrup poured over it, or drench the fritters in the syrup and serve.

Pairs Well With

Serve as a side dish or desert
