Why I Love This Recipe

Ingredients You'll Need

2 cups pumpkin
1 cup brown sugar, packed
1/2 cup canola oil
1/2 cup water
4 eggs
2 cups flour
1 cup oatmeal
4 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon ginger
1/4 teaspoon cloves
1/2 teaspoon salt


heat oven to 375*F. Grease and flour muffin tins, or use paper liners. in large mixing bowl, mix together all ingredients, blend until just combined. Do not over mix. Fill prepared muffin tins three fourths full. Bake for 18 to20 minutes, or until muffins test done. Cool in pan or on a wire rack.
