Pumpkin Soup

I picked this recipe because it was my moms favorite soup and recipe.
Ingredients You'll Need
1 kg pumpkin
2 med carrots chopped
2 tbsp butter
1 tsp oil
1 med onion chopped
1 tbsp minced garlic
4 c veggie stock
1/2 c cream
salt and pepper to taste
Directions
1)skin and deseed pumpkin and chop into cubes
2) in large pan melt butter, oil and add onion and garlic, then add carrot and pumpkin after a few minutes
3)roast veggies 10-15 min and keep stirring, then stir in the stock and season
4) cover and cook until veggies are tender, use a hand blender and blend until smooth, then cook a few more minutes until serving
