Pumpkin Spice Cutout Cookies

Why I Love This Recipe

Ingredients You'll Need

3 1/4 cups flour
1 tablespoon pumpkin pie spice
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter, softened
3/4 cup brown sugar, firmly packed
1 large egg
1/2 cup light molasses


Combine flour, pumpkin pie spice, baking soda and salt in bowl. Beat butter and sugar in mixer bowl at medium high speed until light and fluffy. Beat in egg and molasses. With mixer at low speed, add dry ingredients just until blended. Divide dough into quarters and flatten into disks. Wrap and refrigerate 4 hours or overnight until firm.

Heat oven to 350 degrees. Grease 2 large cookie sheets. On floured surface with floured rolling pin, roll one disk 1/8 inch thick. Cut out shapes with cookie cutters. Transfer to prepared sheets. Bake 8 to 10 minutes until edges are lightly browned. Cool on pans 1 minutes, then transfer cookies to wire racks. Repeat rolling and cutting remaining dough and craps. Makes 7 dozen. Decorate with icing.
