Why I Love This Recipe

This was my great grandma's pancake recipe. They called her purple grandma because her favorite color was you guessed it, purple. This pancake recipe was the first recipe I learned how to cook, and my grandma taught it to me. Not only was it the first thing I learned how to cook, but someone very special taught me. My grandparents helped raise me, and my "Ahma" was my favorite person growing up. Now that they have passed on, every time I make this recipe it brings back fond memories. This recipe has now become my signature recipe - everyone loves these fluffy, comforting pancakes every time I make them. My favorite way to eat them is with lots of butter!

Ingredients You'll Need

2 cups flour
1 1/2 teaspoons baking soda
1 teaspoons salt
2 tablespoons sugar
2 cups buttermilk
2 eggs
2 teaspoon canola oil
*cooking spray/butter

1. Preheat a griddle or stove with a frying pan to medium heat.

2. In a big bowl combine the flour, baking soda, salt and sugar.

3. Add in the buttermilk, eggs and canola oil, stirring until most of the lumps are gone.

4. Spray/butter the griddle/pan, scoop 1/3 cup of the batter at a time onto the griddle/pan. Buttering/spray each time a new batch goes onto the griddle/pan.

5. Cook about 2-4 minutes, until you see bubbles start to form on the pancakes. Flip and cook for another minute.

6. Repeat until batter is done.

*optional top with syrup, fruit, butter, etc.
