Why I Love This Recipe

Apple crisp has always been a long time favorite of mine and I loved the crisp my Mom would make growing up. Once I became an adult, I tried finding that same recipe Mom used to make for several years- kits, recipe books, online searching- to no avail. I mentioned it to Mom one day and she asked what I remember specifically about it and I mentioned a balance to the flavor. All the recipes I had tried were too sweet, the recipe in my memory seemed like it should have more salt in it to balance the flavor. Mom went home to dig through her recipe box and lo and behold- found the recipe and the kicker is- it's microwaved!

Ingredients You'll Need

5 C. Sliced, peeled apples
1/2 C. butter, softened
3/4 C. quick oats
1 C. flour
1 C. brown sugar, packed
1/2 t. salt
1 t. cinnamon


Directions

Lay apple slices in a 2 quart, glass dish (8x8 or 9x9). Cut butter and remaining ingredients with a pastry cutter or fork. Sprinkle over apples. Microwave for 15 minutes. Serve.


Note- I like to layer a sprinkle of cinnamon and nutmeg between layers of apples. Millet (or others) flour can be sub'd for a gluten free recipe. I prefer to use sea salt over traditional table salt and like to sprinkle a touch on top before putting in the microwave. Serve this up with some cinnamon ice cream and a drizzle of T Marzetti Salted Caramel Apple Dip.
