1-1 1/2 lbs boneless, skinless chicken breasts
2 tbsp olive oil
2 tbsp lemon juice
3 cloves of garlic
1 tsp dried basil
1/2-1 tsp salt
1/4-1 tsp ground pepper
Directions
-Mince garlic and juice lemon
-Cut chicken breast in half lengthwise
-Place chicken breast half between two pieces of plastic wrap or in a plastic storage bag and pound with a heavy pot until it is ¼ - ½ inch thick. Repeat with remaining chicken breast half
-Mix the olive oil, lemon juice, garlic, basil, salt and pepper in a large baking dish or bowl until well blended
-Add the chicken and turn to coat with the spice mixture
-Let marinate at room temperature for 10-20 minutes. (You can also pound and season the chicken up to a day before you’re going to grill the chicken – just cover the bowl with plastic wrap and keep it in the fridge)
-Heat a grill to medium temperature
-Remove the chicken breast from the marinade and discard the marinade
-Grill the chicken until browned and cook through (2-3 minutes per side)
