Quick Vegan Ceasar Salad

FEATURING: Lettuce and cucumber.
A simple yet delicious recipe. You can also make it just with cucumbers! You have 3 dressing options to choose from!
HOW TO MAKE CROUTONS: Preheat oven to 400F : Brush bread on both sides lightly with oil and place on large baking sheet. Toast bread until golden, 10 to 15 minutes, turning halfway through. Set aside. When cool, cut in cubes.
Ingredients You'll Need
OPTION 1: MAYO-BASED DRESSING
1 Tbsp dijon mustard
2 Tbsp Tamari or soy sauce (you can use instead 2 Tbsp nutritional yeast)
1/2 cup vegan mayonnaise
1 garlic scape (or 1 garlic clove, choppe)
2 tsp capers
2 Tbsp lemon juice
1 Tbsp maple syrup
1 Tbsp olive oil
1/4 tsp apple cider vinegar
OPTION 2: FOR THE TAHINI-BASED DRESSING (MAKES 3/4-1 CUP)
1/4 cup drippy tahini
Juice from ½ large lemon (about 2-3 tablespoons fresh lemon juice)
1 clove garlic, grated or finely minced
1 teaspoon very finely diced capers (optional)
2 teaspoons caper brine (from the jar of capers) (optional)
1 teaspoon dijon mustard
1-3 tablespoons warm water, to thin out dressing a bit to your liking
Freshly ground salt and black pepper, to taste.
OPTION 3: FOR THE CASHEW-BASED DRESSING (MAKES 3/4-1 CUP):
1/2 cup raw cashews, soaked overnight
1/4 cup (60 mL) water
2 tablespoons (30 mL) extra-virgin olive oil
1 tablespoon (15 mL) lemon juice
1/2 tablespoon (7.5 mL) Dijon mustard
1 clove garlic, grated or finely minced
1/2 tablespoon (7.5 mL) vegan Worcestershire sauce (I use Wizard's gluten-free brand) (optional)
2 teaspoons capers
1/2 teaspoon fine grain sea salt and pepper, or to taste
FOR THE SALAD
1 head of lettuce, washed and chopped
1 cucumber, chopped

Directions
MAKE THE DRESSING: Regardless of which dressing option you choose from the 3 options listed, all you got to do is to add all the ingredients from the dressing option of your choice to a blender and blend until creamy.
PREPARE THE SALAD: In a large salad bowl, put the lettuce and top with cucumber and croutons. Serve the dressing on the side so that people can choose how much to put & that you can store the leftovers. Alternatively, mix in the dressing just before serving (note that leftovers won't keep long if you do so).
