Why I Love This Recipe

This vegetarian salad is a way to get your protein and a good way to eat your vegetables.


Ingredients You'll Need

1 cup cooked quinoa, cooled
1 cup canned chickpeas, rinsed and drained
1/2 cup chopped fresh mint leaves
1/2 cup chopped cucumber
1/4 cup chopped red onion
1/4 cup lemon juice
1/4 cup olive oil
Salt and pepper to taste


Directions

In a bowl, combine quinoa, chickpeas, mint, cucumber, and red onion.
Whisk lemon juice, olive oil, salt, and pepper.
Pour dressing over salad; toss to combine.
Chill before serving for flavors to meld.
