Why I Love This Recipe


Ingredients You'll Need

1 cup quinoa (or bulgur wheat(
1 1/3 c water
1/2 t salt
1 clove garlic, minced
2-4 T lemon juice or 3T lemon juice plus lemon zest
1/4 c olive oil
1/4 t allspice
1 c parsley
1/2 c mint or cilantro
1 pint cherry tomatoes
1 large cucumber
green onions
Salt and Pepper
Feta (opt)


Directions

Rinse quinoa and place in saucepan with water and 1/4t salt. Bring to boil, reduce to low, cover and simmer until quinoa is tender (about 10 minutes). Remove from heat and let stand, covered, for 5 minutes. Fluff with fork and spread onto baking sheet to cool.


Whisk together garlic, lemon, olive oil and allspice. In large bowl, toss to combine everything else (including feta if desired), then toss with dressing. Serve immediately.
