RICE, ARTICHOKE AND SHRIMP SALAD

Ingredients You'll Need
1 pkg. chicken flavor rice mix
4 green onions, thin sliced
1/2 green pepper, chopped
12 pimento olives, sliced
mayonnaise
2 (6 oz.) jars marinated
artichoke hearts
3/4 tsp. curry powder
2 lb. shrimp, boiled, deveined
and cleaned
Directions
Cook rice as directed on package, omitting butter. Cool
in large bowl. Add onions, green peppers and olives. Drain
artichokes, reserving marinade. Halve or quarter hearts if
necessary. Combine artichoke marinade with curry powder and
mayo. Add artichoke hearts to rice salad and toss with dress-
ing. Chill. This part can be made the day ahead. Add shrimp
2 to 3 hours before serving.
