Why I Love This Recipe

These roasted potatoes are so versatile. We love them with grilled and roasted meats.


Ingredients You'll Need

3 pounds sweet potatoes and white potatoes, quartered (peeled if you choose). Cut the sweet potatoes slightly larger because they cook faster
1/4 cup olive oil
Freshly ground sea salt to taste
Freshly ground black pepper to taste
2 garlic cloves, minced
2 medium shallots, chopped
3 sprigs of fresh thyme
4 sprigs of fresh sage


Directions

Pour olive oil into a large bowl. Add garlic, shallots, potatoes, and herbs. Mix well. Salt and pepper to taste. Spread out onto a rimmed baking sheet lined with parchment paper in a single layer. Roast in an oven preheated to 400F for about 45 minutes or until potatoes are browned and tender. Toss a couple of times to brown evenly. Remove herbs and discard, serve immediately.
