Rainbow Chard Tacos
Why I Love This Recipe
These sweet, colorful simple tacos make a wonderful, quick light meal or appetizer. For added protein add black beans.
Ingredients You'll Need
1 bunch rainbow, red or green Swiss chard
Salt to taste
1 medium white or yellow onion, sliced
2 large garlic cloves, minced
Kernels from 2 ears sweet corn
Freshly ground pepper
8 warm corn tortillas
½ cup crumbled queso fresco or feta
1-2 tomatoes, diced
1/4 cup cilantro, diced
Chop chard, tomatoes, onions, cilantro, corn, garlic
Heat oil over medium heat in a large, heavy skillet and add the onion. Stir for about 7 minutes until onions are tender. Add a pinch of salt, garlic, diced chard stalks, and corn kernels. Stir often for about 5 mins until corn is tender. Season to taste with salt and pepper. Remove from heat.
Mix together tomatoes and cilantro.
Add vegetables, tomatoes, and cilantro to tortillas. Serve with a squeeze of lime and crumbled cheese.
