Ingredients You'll Need
1 cup unsweetened nut milk
1 tbsp lemon juice
¼ cup unsweetened apple sauce
1/3 cup maple syrup
2 tbsp flax oil or olive oil
1 tbsp pure vanilla extract
1 ½ cups sprouted spelt whole wheat flour
1 cup oat bran
¼ cup flax meal
½ tsp Baking soda
2 tsp Baking powder
1 tsp Cinnamon
1/8 tsp salt
½ cup raisins
Directions
Preheat oven to 400. Grease a muffin tin.
In a small bowl add the lemon juice to almond milk to make the buttermilk.
In a large bowl, mix the sprouted spelt flour, bran, flax meal, baking soda, baking powder, cinnamon and salt.
Mix the applesauce, oil, vanilla and maple syrup into the buttermilk mixture.
Once combined, add the wet mixture to the dry.
Fold in the raisins.
Scoop into the muffin tin.
Bake for 15 minutes or until lightly golden and a toothpick comes out clean.
Cool then...eat!
