"Heaven on a plate."

Why I Love This Recipe

It is simply heaven on a plate! Delicious fruitiness of lemon and raspberry. Delightful on a hot summer's day. Invite someone over

for a sweet taste.

Ingredients You'll Need

1 1/2 cups unbleached flour
1/2 cup whole wheat flour
1 cup sugar
1 Tbsp. baking powder
1/4 Tsp. salt
1/2 Tsp. lemon zest
1 cup 2% buttermilk
1/2 cup unsweetened applesauce
3 egg whites
1 Tsp. Lemon extract
1 package of thawed frozen raspberries in syrup


Preheat oven to 400 degrees

Sift together then whisk the flour, sugar, baking powder, salt and lemon zest into a large mixing bowl and make a well in the middle.

Whisk together the buttermilk, applesauce, egg whites, lemon extract to the dry mixture and stir just until the batter is moistened.

Fold in 1 package of thawed frozen whole red raspberries prefer in syrup.

Put everything in a PAM sprayed 9 X 13 pan. Bake on bottom rack for
20 min. Then on the middle rack for additional 10 min. Test with a toothpick before taking of of oven. Serve warm (try it with a scoop of vanilla frozen yogurt or ice cream), coolwhip is great too!

Pairs Well With

Serve with a cup of java, tea or desert wine.
