Raspberry Mousse Pie
"It is about mousse which makes you fly high."Serves | Prep Time 30 min | Cook Time
Why I Love This Recipe
The best mousse I have ever tried. In my case I tried to find the mousse I can create, `cause I do not want to serve meals which aren`t mouthwatering and don`t make my kiddo happy.
Another thing I like it is not that expensive and does not require many pieces to add. So, 30 minutes and my daughter and husband are happy, do I need more?

Ingredients You'll Need
Nonstick cooking spray
7 graham crackers
3 tablespoons fresh lemon juice
2 1/4 teaspoons powdered gelatin (from one 1/4-ounce packet)
5 cups fresh raspberries (about 1 1/2 pounds)
1/2 cup plus 2 tablespoons sugar
2 cups cold heavy cream
Lightly coat a 9-inch square baking pan with parchment paper and and line cooking spray, leaving a small 2-inch overhang on all sides. Arrange graham crackers in an even layer, break them to fit as necessary. Place lemon juice in a small bowl and sprinkle with gelatin. Let sit until gelatin softens, 3 minutes. In a blender, puree 2 cups raspberries until smooth, scraping down bowl as needed. Pour through a fine-mesh sieve into a measuring cup, pressing on solids (you should have about 1 cup of puree); discard solids.
