2. Form mixture into 1-inch balls and place them on a baking sheet lined with parchment paper. Flatten them slightly to resemble hockey pucks. Freeze for 20-30 minutes until firm.
***For the Carob Coating***
3. In a microwave-safe bowl, combine 10 oz of carob chips and 2 tablespoons of ghee or butter. Microwave in 30-second intervals, stirring between each until completely melted and smooth.
4. Stir in 1/2 teaspoon of vanilla extract and 1/4 teaspoon of sea salt into the melted carob until well combined.
***Assembly***
5. Remove the peanut butter pucks from the freezer. Use a fork to dip each puck in the melted carob until fully coated. Allow excess to drip off before placing it back on the parchment-lined sheet.
6. Immediately sprinkle each puck with finely crumbled rice cakes before the carob sets.
7. Chill the carob-coated pucks in the refrigerator for an additional 15-20 minutes or until the coating is firm.
