Why I Love This Recipe


Ingredients You'll Need

1 cup red quinoa
1 1/4 cups vegetable broth
1 onion chopped
handful of cilantro chopped
1 red bell pepper diced
1 roma tomato diced
1 large lemon juice
dash of olive oil
salt and pepper to taste


Directions

In pot bring water and quinoa to boil.


Reduce and simmer for 20 minutes and cover.


Let it cool and add onion, cilantro, red bell pepper, lemon juice and olive oil.
