The Renaissance saw a revival of interest in ancient knowledge, including the use of lemons in cuisine and medicine. Lemon shrubs, a concentrated syrup made with lemon, sugar, and vinegar, became popular as a way to preserve the fruit's flavor and nutritional benefits. This recipe was often used by sailors to prevent scurvy on long voyages.
Ingredients You'll Need
4 lemons, thinly sliced
2 cups sugar
2 cups white wine vinegar
Directions
Place the lemon slices in a large bowl and sprinkle with sugar. Let sit for 2 hours, stirring occasionally.
Pour the lemon and sugar mixture into a clean glass jar and add the white wine vinegar.
Cover the jar with a lid and let it sit at room temperature for 24 hours.
Strain the mixture through a fine-mesh sieve, pressing on the lemon slices to extract all the liquid.
Transfer the shrub to a clean glass bottle and store in the refrigerator for up to 6 months.
