Rhubarb Custard Pie

Serves 8 | Prep Time 30 minutes | Cook Time 45 minutes

Why I Love This Recipe

A great dessert in rhubarb season.


Ingredients You'll Need

3 1/2 c rhubarb, diced
1 1/2 c sugar
2 T tapioca
3 eggs, beaten
1/2 c evaporated milk
1/8 t salt
1 t vanilla
1 T flour
unbaked pie shell


Directions

Mix first three ingredients and set aside.
Mix eggs, milk, salt and vanilla, and combine with rhubarb mixture. Sprinkle 1 T flour on unbaked pie shell. Pour pie filling into shell.
Bake at 425 degrees for 20 minutes. Reduce temperature to 350 degrees and bake 25 minutes.
