Rice Parmigiana

Ingredients You'll Need
2 cup White Rice, Cooked
1 cup Fresh Parsley, Coarsely Chopped
1/4 cup Green Onions, Chopped
1 cup Parmesan, Grated
2 Eggs, Lightly Beaten
1/4 cup Milk
1/2 tsp Salt & Pepper
4 oz Mozzarella Cheese, Sliced Or Shredded
Tomato Slices
Directions
Oven Temperature: 350°F
*Mix the cooked rice with the parsley, green onions, and parmesan cheese; Beat the eggs and milk together thoroughly and mix into the rice
*Add salt & pepper and blend well
*Turn into well buttered 1 to 1/2-quart dish that has a cover
*Arrange half the cheese over the rice; arrange tomato slices over cheese and top with rest of cheese
*Place in a pan of boiling water; bake at 250 degrees for 30-35 minutes, or until casserole is set
