Rice Pilaf w Veggies and Herbs

Serves 4-6 | Prep Time 5 minutes | Cook Time 20 minutes

Why I Love This Recipe

We enjoy variety in our menus, so this rice pilaf that we can vary with different rices, different veggies, and different herbs really fills the bill.


Ingredients You'll Need

2 t. olive oil
small onion, chopped
1 c. jasmine rice
1/2 t. garlic salt
2 c. chicken broth (I use Tone's chicken base If I don't have homemade)
1 c. leftover veggies such as broccoli, green beans, peas, carrots ( or use frozen veggies if you don't have any leftovers)
1 T. fresh basil


Directions

Heat olive oil in a medium saucepan, add onion and cook until translucent, add rice and cook unitl rice is lightly toasted. Add garlic salt and broth and bring to a boil. Turn heat to simmer, stir well and simmer for 10 minutes. If using frozen veggies, add them now. Otherwise stir and simmer another 5 minutes then add leftover veggies and basil. Stir, simmer another 5 minutes. Fluff with a fork and serve.
