Rice Pudding with Soy Milk

Butter for baking dish
2 cups Basmati rice, cooked
4 eggs
2 cups soy milk
1/2 cup sugar
2 tablespoons melted butter
Grated rind of 1 lemon
Juice of 1/2 lemon
1/2 cup raisins
Directions
Preheat the oven to 350 degrees. Butter a baking dish and add the rice.
In a large mixing bowl, beat the eggs with a whisk until frothy. Add the rest of ingredients and mix thoroughly. Pour these ingredients over the rice, combining well with a fork.
Bake the pudding until set, about 40 to 50 minutes.
