Why I Love This Recipe

I wanted to make some different cookies, in December. I found this recipe in my email in box and decided to make them. I tried them, my mother tried them, and they very tastey! These drop cocokies are drizzled with a lemon frosting and they tend to be small.

Ingredients You'll Need

1/2 pound Ricotta cheese
1 tsp vanilla
1 cup cake flour
1 cup all purpose flour
1/2 teaspoon baking powder
1.2 teaswpoon baking soda
1 cup sugar
1/2 cup butter
1 egg
1/4 cup milk
1/4 cup whipped cream
lemon juice

In a large bowl combine ricotta cheese and vanilla; set aside. In another bowl combine clake flour, all purpose flour, baking powser and baking soda; set a side. Cream sugar and butter in an electric mixure on medium speed. Beat in egg. With mixure on low speed, alterneately add ricotta mixture and flour mixtrue to creamed mixture, beating until combined. Drop dough by teaspoons onto a parchement lined cookie sheet. Bake in a 350 f degree oven for 8 to 10 mintues or until the bottoms are golden brown. Transfer to a wire rack; allow to cool. Meanwhile, for frosting, combine powdered sugar, milk, whipped cream and enough lemon juice to make a drizzling consistency. Drizzle over the cooled cookies
