Risotto

"Main Dish, Risotto"

This recipe is good because if you want to have a meatless dinner tonight, this can get you just that. The recipe is also flexible because you can add different meats to it too.
Ingredients You'll Need
1 cup sliced, fresh mushrooms
2/3 cup long-grain rice
1/3 cup chopped green peppers
2 tbsp margarine or butter
1 cup chicken broth
1/2 cup water
1/4 tsp dried sage, crushed
1/8 tsp pepper
2 tbsp grated Parmesan cheese
Directions
1. In a medium sauce pan, cook mushrooms,rice,and green peppers in margarine until green pepper is tender
2. Remove from heat, stir in broth, water, sage, and pepper
3. Bring to boil; reduce heat
4. Cover, simmer about 15 minutes or until tender, Remove from heat
5. Let stand, covered, for 5 minutes
6. Fluff with fork, sprinkle with cheese

Risotto might go good with cooked chicken breasts
