Roast Chicken with Fresh Herb Compound Butter

The compound fresh herb butter infuses the meat with wonderful fresh herb flavor. In warm weather I enjoy cooking the chicken on my outdoor grill.
Ingredients You'll Need
5-6 lb. whole chicken
1/2 stick butter, softened
freshly ground sea salt
freshly ground black pepper
1/2 c. fresh herbs, finely chopped (I used parsley, sage, rosemary, and thyme)
Directions
Brine chicken in a bucket or tub of cold salted water for at least an hour, or overnight. Drain and dry chicken. Add chopped herbs to softened butter and mix well. Loosen skin on breast, thighs, and legs of chicken and spread under skin with herb butter. Use remainder of butter to rub chicken overall. Then liberally salt and pepper over all. Place chicken in a roasting pan and put in an oven preheated to 425F (or cook on an outdoor grill heated on one side to 500F, cook on the unlighted side with grill closed) for an hour and fifteen minutes or until instant thermometer registers 165F. Remove from heat and let chicken rest for 10 minutes before carving and serving.
