This was so delicious and easy to make that I had to add it here.
Ingredients You'll Need
6 - 8 full chicken legs
2 lemons - thinly sliced
3 whole heads of garlic
3 bay leaves
Chilli flakes
Oliveoil
Salt and pepper
Directions
Place chicken legs, chilli flakes (amount depending on how hot you like to make things) salt and pepper (generously to taste) in a large bowl and toss with enough olive oil to cover.
Arrange chicken legs evvenly, skin side up, in roasting pan and refrigerate overnight uncovered to dry out skin and make it crisp when roasted. (I never thought of doing this but it works!)
Pre-heat oven to 375 F
Cut garlic heads in half crosswise and place open side down at bottom of roasting pan.
Slice lemons and scatter over chicken and add bay leaves
Drizzle olive oil over everything and add a little salt and pepper
Roast in pre-heated oven for 90 minutes until chicken is falling off bones.
Service from roasting pan and enjoy!
