It is a great recipe for a long hot day when you still need a meal at the end.
Ingredients You'll Need
One whole chicken cleaned, neck and giblets removed
two onions halved or quartered
cooking spray
1 tablespoon brown sugar
2 teaspoons salt
1 teaspoon pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 tablespoon smoked paprika
Directions
Clean and prepare a whole chicken
Mix your preferred spices into a rub and rub on chicken
Spray the inside of the crock pot with cooking spray, I used an olive oil spray.
Create a rack to lift the chicken off the bottom of the crock pot. This ensures the chicken roasts and does not steam. I used my stainless steel salad tongs but anything will work, they often recommend onions cut in half.
Cut up your onions into big chunks and place in the bottom of the pot.
Place chick in the crock pot, DO NOT ADD WATER.
Place lid on ensuring it fits properly.
Cook on high for 3 to 4 hours depending on the size of the chicken. For food safety cooking on low is not recommended. If you use a thermometer you would want the thickest part of the thigh to register at 165 degrees or higher.
Finish by broiling or barbequing for a few minutes - this will brown it to a classic roasted chicken colour.
Want potatoes too? If you have a big crock pot just take some new potatoes, wash and season, and plunk them into a small glass bowl that you put into the crock pot (make sure the lid still fits).
