Roasted Tomato Orzo

Ingredients You'll Need
2 pints grape tomatoes, cut in half
3 Tbs. olive oil, divided
1 1/4 tsp. salt, divided
1 tsp. minced garlic
1/2 tsp. ground black pepper
1 1/2 cups orzo, cooked according to package directions
1/2 cup pine nuts, toasted
1 tsp. fresh lemon juice
Preheat oven to 400 degrees.
In a large bowl, combine the tomatoes, 2 Tbs. oil, 1 tsp. salt, garlic and pepper, and toss until evenly coated. Place tomatoes on a baking sheet, and roast for 25 minutes.
In a separate large bowl, combine the cooked orzo, roasted tomatoes, pine nuts, remaining oil, remaining salt, and lemon juice. Mix until well combined.
