Ingredients You'll Need
2kg beetroot peeled and quartered
olive oil for roasting
250 ml good quality strawberry or other berry jam
60 ml balsamic vinegar
beetroot leaves, baby spinach, rocket and watercress
salt and black pepper
Directions
Preheat oven to 200 degree C
Place beetroot in a roasting tin with olive oil and season,
Cover with foil and roast until tender. Remove foil and continue to roast until caramalized.
Add jam and balsamic vinegar with extra black pepper and return to oven for a few minutes. Allow to cool
To serve toss a generous amount of greens into the beetroot.
You can also play around with adding feta cheese, avocado, or green beans.
