Ingredients You'll Need
base: yellow potatoes, sweet potatoes, carrots
flavoring: white onion, garlic
greens: chard, kale, or spinach
fresh add-ins: green onion
optional cheese: jack cheese (Chao)
optional meat: potato apple sage sausage or burger crumbles
seasoning: basil or thyme, salt
cooking oil: coconut oil
Directions
Cut potatoes, sweet potatoes/yams, and carrots ("root vegetables") into bite-size pieces
Heat a small amount of coconut oil on low (alternatively, place root vegetables in a pan, drizzle with a tiny amount of oil, and roast)
Sautée root vegetables until cooked through, turning up the heat to medium to brown them
Sautée meat (optional) separately and mix in before seasoning
Chop white onions, garlic, chard/kale/spinach, and green onions, add to pan
Season to taste with basil or thyme
Add cheese bits (optional)
Once cooked almost all the way, add white onions
Once white onions are cooked, add garlic and chard/kale/spinach
Finally, add green onions
Mix, salt, and plate
