Ingredients You'll Need
2/3 cup frozen raspberries
1 tablespoon strawberry fruit spread
1/2 teaspoon vanilla extract
1 box mini phyllo shells
2 tablespoons non-fat Greek yogurt
1 pint Fresh Raspberries
Mint Leaf for decoration (optional)
Combine raspberries and fruit spread in a small saucepan, place over medium-high heat, and cook 3 minutes or until mixture has reduced to a scant 1/4 cup. Remove from heat and stir in vanilla extract. Allow to cool, about 5 minutes.
Spoon equal amounts in each of the phyllo shells and spoon about 1 teaspoon yogurt over each shell.
Top with fresh raspberry and mint leaf.
