Rosemary Maple Glazed Pork Cutlets

Ingredients You'll Need
8 pork cutlets
1 bunch scallions
Fresh Rosemary (about 1 TSP)
Salt & Pepper
4 TBSP Butter
2 TBSP Vinegar (white or red wine)
4 TBSP pure maple syrup
2 TBSP Chicken Stock Concentrate
1/2 C Water
Directions
Trim and thinly slice scallion, only using green parts, finely chop rosemary
Pat dry pork cutlets, season generously with S&P
Melt 2 TBSP in pan with high heat
Add pork into pan, turning to brown on both sides, about 2 min/side.
Remove pork from pan. Reduce pan to Medium. Add vinegar, maple syrup, stock concentrate and water.
Let simmer about a minute until thickened, add in remaining 2 TBSP of butter, S&P to taste
Add pork back to pan, toss to coat and remove from heat. Plate with remaining glaze poured over and sprinkle scallions.
Pairs Well With
Use the whites of the scallion and some rosemary to season couscous. Spring Mix salad with apples.
