Rum and Plum Pound Cake

Why I Love This Recipe
An invention I made up because I thought the combination of rum, plums and lemon sounded good together in something sweet. You can leave out the rum and it still turns out great.
Ingredients You'll Need
Cooking Spray
2 ½ cups all-purpose flour
½ t baking powder
½ t baking soda
¼ t salt
1 c brown sugar
1 t stevia powder (or ½ -¾ c sugar)
¼ c butter, softened
3 large eggs
¼ c apple sauce
¼ c fresh lemon juice
1 t vanilla
2 T dark rum
2 T (heaping) plum butter (Babcia’s is a good one or Krakovia)
¾ c low-fat buttermilk
Directions
Preheat oven to 350 degrees.
Coat a loaf pan or 12 cup bundt pan with cooking spray.
Mix together flour, baking powder, baking soda and salt.
In a separate bowl mix together sugar and butter with a mixer at medium speed until thoroughly combined.
Add eggs one at a time. Add lemon juice, vanilla, rum, apple sauce and plum butter.
Beat until well combined.
Add flour mixture and buttermilk alternately to sugar mixture, beginning and ending with flour mixture.
Beat until just combined. Batter will be thick.
Spoon batter into prepared pan.
Bake for 55 minutes - 1 hour or until a toothpick inserted in center comes out clean.
