Russian Sour Cream Pancakes

This is a great recipe that I found in my Grandma's recipe book…. our family favorite.

Ingredients You'll Need
2 eggs
1 pack (about 250g) sour cream
1/2 teaspoon salt
1/2 teaspoon baking soda
100g sugar
250g flour
20g butter, melted and cooled slightly, plus extra for greasing
Directions
Mix eggs, sugar, salt, soda and sour cream together; then add flour, mix and add 2 tablespoons of melted butter.
Leave to stand for 20 minutes.
Cook on the well-heated frying pan poring the batter with a tablespoon (5-6 pancakes at a time).
Cook until surface of pancakes have some bubbles and a few have burst, 1 to 2 minutes. Flip carefully with a thin spatula, and cook until golden on the underside, 1 to 2 minutes more.
Transfer to a baking sheet or platter; cover loosely with aluminum foil, and keep warm in oven. Continue with more oil and remaining batter.
