1 1/4 cups cottage cheese, well-drained

Directions
Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the drained cottage cheese, flour, baking powder, salt, and sugar until it begins to form a dough.
Turn the dough out onto a floured surface and knead for 2–3 minutes until smooth.
Divide the dough into 6 equal portions. Shape each portion into a ball, press your thumb through the center of each ball to create a hole, and gently stretch the hole to form a bagel shape.
Arrange the shaped bagels on the prepared baking sheet.
Brush the tops of the bagels with the beaten egg, reserving some egg for later if needed. Optionally, sprinkle with sesame seeds, poppy seeds, or everything bagel seasoning.
Bake the bagels in the preheated oven for 25–30 minutes, or until golden brown and cooked through.
Remove from oven and let cool on a wire rack before serving.
