S'mores Cookies

Why I Love This Recipe
Ingredients You'll Need
1 cup Butter
1 1/2 cups Brown Sugar
2 Eggs
2 tsp Vanilla
1 1/2 cups Graham Cracker Crumbs
1 tsp Baking Soda
1 tsp Salt
2 1/4 cups Flour
3 oz Marshmallow Bits
2 cups Milk Chocolate Bars, coarsely chopped (about 6 bars)
8 large Marshmallows, cut in half
2 Milk Chocolate Bars, broken into pieces
Directions
Oven Temperature: 350°F
*Preheat oven to 350 degrees; Spray pan with cooking spray
*Cream butter and sugar together until light and fluffy, about 2 minutes
*Turn speed down and add eggs and vanilla, mixing until smooth
*With mixer on med-low speed, add graham cracker crumbs, baking soda, and salt until combined
*Turn mixer to low and add flour until just combined
*Stir in marshmallow bits and chopped chocolate bars
*Press mixture evenly into pan if using muffin top or regular muffin pan
*Bake for about 8 minutes (more or less depending on amount used for each cookie, you want the cookie to have about 4-5 minutes left to cook)
*Press marshmallow half onto the top and continue to bake until marshmallow is puffed and slightly golden and cookie is lightly golden
*Remove and immediately press reserved chocolate onto the top of the cookie, it will melt from the heat of the cookie
*Allow cookies to cool in pan for at least 10 minutes. Loosen edges with knife and carefully remove from pan, transferring to a wire rack to continue cooling
Recipe Tips
*If using muffin top pan, it will be about 1/3 cup of dough per cookie
*If using regular muffin pan, just fill about half way - or use the 1/3 cup of dough as guideline of how far to fill
*If just using regular cookie sheet, place as you would for normal cookies - it will work out the same, they just won't be deep dish cookies is all
