Why I Love This Recipe

When my son, Michael lived in Seattle we visited him every year, and I fell in love with the Pacific Northwest and Salmon. These salmon wraps are one of the ways we enjoy this treat.

Ingredients You'll Need

2 GF spinach wraps
2 oz. cream cheese
Thai sweet chili to taste
2 Salmon filets
A handful of fresh baby spinach leaves
2 slices red onion, thinly sliced (optional)


Grill or pan grill salmon, brushing with Thai sweet chili to taste as it cooks. Meanwhile, in a bowl combine softened cream cheese and Thai sweet chili sauce to taste until smooth. Spread cream cheese on spinach wrap over entire wrap. At one end of wrap layer spinach, salmon, and onion. Fold sides in, then tightly roll wrap to enclose filling. Wrap in plastic wrap until ready to eat, cut in half and serve both halves as a serving.
