Serves 4 to 6 from one large bowl or about 4 to 6 individual ramekins | Prep Time 15 minutes | Cook Time 20 to 25 minutes

Why I Love This Recipe

Serving eggs for large groups of people can be a challenge to keep both looking and tasting like they were just presented. There are countless egg recipes, but only a few are able to hold some sort of consistency for an extended length of time. "Steamed eggs" were our answer for a healthy, consistent alternative to scrambled


Ingredients You'll Need

6 eggs (whisked)
1 2/3 cup flavorful stock (any kind, flavor optional)
2 Tsp chopped scallions (optional)
2 Tbsp. soy (optional)
2 Tsp sesame oil, or extra virgin olive oil
salt to taste.


Directions

Pour eggs into mixing bowl. Gently heat up the stock and add salt to your liking.


Let the stock cool to room temperature than gently fold into the egg and mix with a whisk. Making sure not to whisk it too much.


Pour the egg mixture to a ramekin and cater wrap with plastic wrap.


Place a metal rack in a wok or deep sauce pot than fill the water about an inch. Heat the water until it boils. This will create steam when covered. Gently place the ramekin on top of the rack cover and steam for 20-25 mins.


When eggs are set garnish with scallions, soy sauce and oil.
