Why I Love This Recipe

When fresh strawberries are in season, or in the dead of Winter when the market has strawberries that look good, we enjoy these delicious bars.

Ingredients You'll Need

½ c. sugar
1 ½ c. GGFG Baking Mix
½ t. baking powder
½ t. salt
1 ½ t. zanthum gum
1 large egg
1 t. vanilla
1 stick butter
1lb. strawberries, diced
2 t. cornstarch
1/3 c. sugar


In a food processor place ½ c. sugar, GGFG Baking mix, baking powder, salt, zanthum gum. Pulse a few times. Add egg and vanilla. Pulse. Add cold butter, cut in pieces and pulse until crumbly. Reserve ½ of
Flour mixture, place remainder in bottom of an 8”x8” pan lined with parchment paper and pat down. In a small bowl combine strawberries, 1/3 c. sugar, and cornstarch. Mix well. Spread evenly on top of crust. Sprinkle remaining crumb mixture evenly over top and bake in an oven preheated to 375F for 40 minutes. Or until top is golden brown. Cool completely before cutting into bars.
