Why I Love This Recipe

I got this recipe from a 1800s cookbook. It called for a handfull of this and a teacup of that, a coffee spoon of. Anyhow I adapted it to todays measurements and we love the peppers with pork or chicken. Especially good in a sandwich with the left over pork or chicken.


Ingredients You'll Need

1/2 quart vinegar
1 quart oil
6 quarts of red peppers
3 cups brown sugar
1 pkg pickling spice (about 1/2 cup)
1 quart water
1/2 cup salt
6 finely chopped cloves garlic
1 to 2 tsp. powdered alum per quart
sealer.

1 Bushel of peppers
2 quarts oil
7 1/2 cups brown sugar
1 1/4 quarts vinegar
pickling spice
1/2 cup salt
2 1/2 quarts water
garlic and alum


Directions

One 25 lb. box plus 10 lbs. loose made 20 quart jars which were tightly packed. I had to double the brine for the 20 quarts.
