Ingredients You'll Need
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon sugar
1 cup warm water
1 tablespoon olive oil
Directions
In a bowl, combine the flour, salt, sugar, warm water, and olive oil. Mix and knead until smooth.
Let the dough rest for about 30 minutes, then divide into small balls.
Refrigerate the dough balls overnight. Before cooking, bring them back to room temperature.
Lightly flour your work surface (or oil it) and roll each dough ball into a thin, round sheet.
Preheat your saj machine until it’s hot and ready.
(Optional) Place the rolled dough on a round pillow/mitten to help transfer; otherwise, use your hands.
Gently stretch the dough a bit more on the pillow, then flip it quickly onto the hot saj surface.
Watch closely—bubbles will form within minutes. Check the underside; when it starts to brown, flip to cook the other side.
Cook about 3 minutes per side, or until both sides are lightly browned and cooked through.
Repeat with remaining dough. Serve warm or at room temperature with dips or for wraps.
