"Salmon Loaf Same Taste But Easier Than Patties"

Serves 4 | Prep Time | Cook Time

Why I Love This Recipe

My mom made salmon patties. I made salmon balls when my kids were little and salmon loaf now that i'm older. Its easiest of all 3 to make :)


Ingredients You'll Need

3- 14.75 oz cans pink salmon
3 eggs beaten
Opt: garlic powder couple shakes
salt
about 1 TBS parsley flakes
1 yellow cooking onion diced
1-2 ribs of celery plus leaves diced
Opt: 1/2 Red bell pepper 1/2 green bell pepper both diced
1/4 C whole milk (can use non dairy milks like almond ect)
Opt: 1/4 C cream of wheat or malt'o meal instant cereal
regular seasoned bread crumbs (not Italian seasoned) or my mom used 8 or more slices soft bread tore into pieces

Simple Dill Sauce
16 oz sour cream
1/2 C fresh minced dill
Opt: 1/2 tsp dill seeds
1/3 C pure lemon juice
garlic powder and salt to taste

Dill W/ Horseradish Sauce
1/2 C Mayonnaise
1/2 C Sour cream
1 TBS minced onion
1 tsp lemon juice
2 tsps prepared horseradish
1 TBS fresh dill minced
Opt: dill seeds
Garlic powder and salt to taste
Opt: Pepper

Cooked Dill Cucumber Sauce
2 TBS butter
5 C seedless cucumber diced
1/4 C chopped onion
2 TBS AP flour
1 tsp dill weed
Opt: 3/4 tsp dill seed
1 1/4 C whole milk
2 TBS pure lemon juice
salt to taste

Sweet and Sour Sauce (or use your fav Sweet and sour sauce)
2/3rds C pineapple juice from can or bottle not fresh (Use juice strained from crushed pineapple then add canned or bottled juice to it to equal 2/3rds C)
2 TBS crushed pineapple
1/4 C minute maid orange juice
1/4 C light brown sugar
1/4 C white sugar
1/2 C apple cider vinegar
1/3 C ketchup
1/4 tsp garlic powder
1/4 C cornstarch
1/4 C water


Directions

Salmon Loaf: Mix everything together except salmon and bread crumbs in mixing bowl. After stirred up add salmon breaking it up then add bread crumbs
Grease baking pan I use vegetable oil add meat and shape into loaf shape. Bake at 350F until done all the way through.
Mix up one of the sauces to put on top or to serve it w/ as you desire.
Simple Dill sauce: Mix everything together cover bowl w/ plastic wrap and chill at least an hour
Dill w/ Horseradish Sauce: Mix all together cover w/ plastic wrap and chill at least an hour
Cooked Dill Cucumber Sauce: Fry onions and cukes in butter add dill and flour and opt: dill seed stir and slowly add milk cook 'til thickened take off heat and add lemon juice and salt to taste
Sweet and Sour Sauce: Add everything to a sauce pan and stir 'til sugars are dissolved and cornstarch is mixed in. Put on medium heat and stir until thickened and sauce coats the back of a spoon. Let the sauce cool before serving (Note: If using this sauce it tastes better if you add bell peppers to the salmon loaf)
