Salmon Salad (think tuna salad)
Why I Love This Recipe
This is my mom's recipe and is really good in lieu of tuna salad or just by itself.
Ingredients You'll Need
4 cans salmon, drained
2 hard boiled eggs
2 shallots, minced
3-4 green scallions, green parts only and chopped
1 tsp. lemon juice
2 tbsp. mayo, or more to taste
salt and pepper to taste
Mix it all up, and add more mayo, salt/pepper to taste.
