Salt Cured Long Beans with Garlic and Ginger

This recipe is best served cold. It's refreshing, yet hearty.
Ingredients You'll Need
1lb. long beans or green beans
40g kosher salt
10g ginger (minced)
10g garlic (minced)
30ml soy sauce
30g brown sugar
Directions
Cut the tops and ends of green beans and if using long beans cut the long beans into 4-inch pieces and line the beans in a single layer on a shallow pan.
Then cover with the salt and let sit for 2 hours and rolling them occasionally.
Rinse the access salt off after two hours and pat dry with a paper towel.
Mix the beans with the sugar, soy sauce, garlic, ginger and marinate in a tightly closed container.
Refrigerate for at least 12 and up to 24 hours and serve cold. Can be keep in a sealed container, refrigerated for up to 3 weeks.
