Sam's Chicken Fajita Casserole

Why I Love This Recipe
**Fajita Seasoning (homemade version)
4 T chili powder
2 T cumin
2 t oregano
2 t garlic salt
Mix all and put in plastic storage container. Use as needed (enough for 4-5 casseroles)
Total for the whole recipe... 2754 calories, 38 grams of carb.
Ingredients You'll Need
6 boneless skinless chicken breasts
olive oil
seasoning salt
1 small sweet red pepper cut in strips
1 small sweet green pepper cut in strips
1/2 large onion sliced
Fajita Seasoning**
1.5 c sour cream
1/2 c salsa (you pick the temp you like, medium, hot..)
1 c grated sharp cheddar cheese
Directions
Season breast VERY lightly with seasoning salt, brown in olive oil. Once brown, remove and place in the bottom of 9 x 13 baking dish. Saute onion and peppers in left over olive oil until till crisp. Add 1-2 T Fajita Seasoning Place veggies over chicken. Mix salsa and sour cream together and spread over veggies and chicken. Cover with foil and bake at 350 for 25 minutes.
Remove and drain most of liquid that will gather in bottom of pan. Sprinkle with cheese and put back in, uncovered, bake another 10 minutes.
