Why I Love This Recipe
I've always loved to read especially Christian Romance novels, and one of my favorites was The Glenbrooke series by Robin Jones Gunn.
This recipe was in the last book in the series and it sounded so easy that I had to try it and make it for my Daddy, and he loved it. I brought it out for when my boyfriend now husband came to dinner and he ate two helpings of it! So, naturally it's a staple in my collection.
Ingredients You'll Need
4 boneless, skinless chicken breasts cut in bite sized chunks
1 can cream of chicken or cream of mushroom soup
15 to 20 Ritz crackers, crushed
1/2 cup butter, melted (more if you desire a more golden crust)
Sour Cream (optional)
Directions
Place chicken in casserole baking pan, cover with soup.
Bake at 350 degrees for 40 minutes.
Top with crushed crackers and pour melted butter over the top.
Bake for additional 5 minutes.
